How long to keep white burgundy?

So, two years ago at the wine festival, at one of the first tables I visited I had a white burgundy that blew me away. It was an '05 1er Cru. I went and found a couple bottles -- not inexpensive as you might guess -- and have been sitting on them. Opened the first one last Thanksgiving and while it was very good it did not have that Wow factor I remembered.

My second impression of a wine often is different from my first, so that may be the case here. But I'm also wondering if I've sat on this too long, or possibly, not long enough. I've heard of wines "closing down" and then later re-emerging but don't know if that applies here.

Can anyone comment?

Clearly you need a second opinion. I'll be home all weekend to give you one so bring it by. This is purely clinical of course

I've seen 2005 1er Cru white burgundy drinking windows go to 2020!! Of course it depends on the wine but a 2005 1er cru should last more than 5 years. Perhaps you drank it too early. As far as "closed/shut down" goes, I've mostly heard that "theory" applied to CDP's.

What was the wine? Did you check WS or CT for drinking windows?

Did the wine show signs of oxidation? There is a serious problem with white burgs oxidizing prematurely - http://oxidised-burgs.wikispaces.com/

If not premoxed, the wine should age and improve for at least 10 years. They do sometimes hibernate, though. As J2K suggests, I'd look for notes from others.
